Vegetarian Chili

This delicious vegetarian chili is a great way to enjoy a hearty meal without the meat. It’s packed with flavor and nutrition, and it’s easy to make. You can serve it with a side of rice or tortilla chips, or just enjoy it on its own.

Ingredients:

– 2 tablespoons olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 red bell pepper, diced
– 1 green bell pepper, diced
– 1 jalapeno pepper, diced
– 1 teaspoon ground cumin
– 1 teaspoon chili powder
– 1 teaspoon smoked paprika
– 1 teaspoon oregano
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 (15-ounce) cans black beans, drained and rinsed
– 2 (15-ounce) cans diced tomatoes
– 1 (15-ounce) can corn, drained
– 1/2 cup vegetable broth
– 1/4 cup chopped fresh cilantro

Instructions:

1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

2. Add the bell peppers, jalapeno, cumin, chili powder, smoked paprika, oregano, salt, and black pepper. Cook for another 5 minutes.

3. Add the black beans, tomatoes, corn, and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes.

4. Stir in the cilantro and serve. Enjoy!
